When I found this bright yellow zucchini in the bio store I did not know what to make with it, but I just knew I had to bring it home to cook with it. I thought about making a zucchini salad or some zucchini fritters, but I choose to make a simple soup instead. And I am glad I did. The soup of the yellow zucchini does not only look bright I also liked the flavour, I even prefer the yellow zucchini above a normal green zucchini.
Yellow zucchini is a bit sweeter in comparison with its green brother. It can be cooked the same way as a green zucchini and is just as healthy. So when you are thinking about making a healthy lunch, try this recipe. With about 200 grams of zucchini per bowl, you know you got a healthy portion of soup. I topped this yellow zucchini soup with some crumbled feta. I know feta and green zucchini go well together and the feta is also very good with some yellow zucchini.
So next time you see a yellow zucchini, take it home and make some soup that is bursting with flavour and goodness.
Yellow zucchini soup with feta

- 400 gr of yellow zucchini
- 1 clove of garlic (small)
- 1 small onion
- 500 ml of stock
- 35 gr of feta
- pinch of pepper
- 1 tablespoon of olive oil
Instructions
Add the olive oil in a large frying pan and set to a medium heat
Dice the onion and add to the pan
Slice the garlic and add to the onions, let is cook for 3 to 4 minutes, till the onions are soft
In the meantime, cut the zucchini in cubs and add to the onion mixture
Let is cook for 5 till 10 minutes, or till the zucchini gets a little bit soft
Add the stock to the pan and let everything cook for 5 minutes
Transfer the contents of the pan to a blender and blend till the soup is smooth
Divide into two bowl and top with some crumbled feta and fresh grounded pepper
