Portuguese Cake – Bolo de bolacha

Bolo de bolache is a traditional Portuguese cake made from butter and cookies and is made without baking. The cookie cake has a light coffee taste and the butter cream makes this cake a real treat. This recipe comes from the north of Portugal and I got this recipe from a Portuguese grandmother who has been making this cake for more than fifty years.

In the traditional recipe only almond flour is used and not whole almonds. Also big chunks of chocolate you will not find in the traditional recipe, but I find that the bigs chunks of chocolate makes this cake even a more festive cake.

Serves: 10 Cooking Time: 50 minutes + 6 hours of waiting time

Ingredients

  • 300 gr of biscuits
  • 200 gr of sugar
  • 300 gr of soft butter
  • 3 egg yolks
  • 200 ml of espresso
  • almond flour for the baking spring

Instructions

Put the soft butter in a bowl and beat it lightly with the help of a food processor

While mixing the soft butter you can add the sugar little by little

When the sugar is incorporated add the egg yolks one by one

Put the espresso in a bowl

Take a cake spring and butter this, coat the buttered cake spring with a layer of almond flour

Build the cake in layers, start with a layer of the buttercream

Dip some biscouts in the espresso and place them on the butter cream as a second layer

Repeat this process and build the cake layer by layer ending with a layer of butter cream

Put the cake in the refrigerator to set, this will take at least 6 hours (overnights would be best)

Once the cake is ready, you can decorate it with, for example with nuts and chocolate shavings

Notes

These cake is easy to make and will not blow your budget. You can add hints of different flavours. For example use instead of 200 ml espresso 100 ml espresso and 100 ml of orange liqueur.
