Healthy cheesecake

8 slices  – each slice 195 kcal – 14 gr protein – 6,5 gr fat – 20 gr carbs

This cheesecake full of protein is the best snack without the feeling quilty. This cheesecake is made with Whey protein which makes this cake a ideal treat on training days. This time a made this cake with blueberries but the base recipe gives so much more options. So get creative and make this cake with mango and mint or with mashed bananas and coconut flakes.

This cheesecake is easy to make with only a few ingredients. In this recipe I used protein powder with a vanilla taste if you would use natural protein powder you can add a teaspoon of vanilla extract or add some of the marrow of a vanilla bean.

The cake has no added sugar and is not super sweet. If you have a sweet tooth and really want to indulge yourself you can add some sugar to the batter of serve the cake with some sweet jam.

Blueberry Cheesecake

Ingredients

  • 500 gr of thick yoghurt (french quark would be best)
  • 50 gr Whey powder (vanilla)
  • 250 gr of blueberries (frozen)
  • 2 eggs
  • For the bottom:
  • 50 gr oatmeal
  • 50 gr granola
  • 50 gr whole grain biscuits
  • 25 gr honey
  • 30 gr coconut butter (melted)

Instructions

Grease a cake tin of 24 ø centimeter

Preheat the oven on 180 C/360 F

Put the oatmeal, the granola and the biscuits in a blender and blend this to a fine flour

Combine the flower with the honey and melted butter and spread this on the bottom of the cake tin

Next mix the thick yoghurt with the protein powder

Add the eggs one by one and mix till you get a smooth batter

Add half of the blueberries to the mix

Pour the mix in the cake tin

Sprinkle the last blueberries on top of the batter

Bake the cake at 180 C/360 F at 30 till 35 minutes

The cake is done when it begins to colour and the middle is set

The recipe above is for a blueberry cheesecake but this recipe is also very good for making a banana cheesecake. Replace the blueberries for 160 gram of mashed ripe bananas and mix some coconut flakes in the batter, when the cake is baked sprinkle some coconut on top.  So which cake are you going to make?
