A simple carrot and red onion salad with some Asian flavours that is the perfect side dish with many dishes. This salad is made with ginger, turmeric, chilli, soy and many more flavours that makes these carrots shine. On warm summer days, I love to eat light food and a lot of veggies. This salad is perfect with some grilled fish or chicken and makes for a healthy light meal on summer days. This salad is made with only carrots and red onion, but it is also tasty to add some cucumber or bean sprouts to the mix.

Thai dressing and marinade

The dressing used for this salad can be used as a salad dressing but is also a good marinade for fish. When I make this dressing I always make some extra so that I have some extra in the fridge that is already made, which is super handy when you do not have the time to cook. The dressing is made with fresh grated ginger and turmeric if you would replace this with dried turmeric and ginger the dressing can be stored for several weeks instead of days.

Ingredients

  • 250 gr of grated carrots
  • 1,5 thinly sliced red onions
  • For the dressing:
  • 2 tablespoons of soy sauce
  • 2 tablespoons of sweet soy sauce (ketjap manis)
  • 2 tablespoons of honey
  • 2 tablespoons of lime juice
  • 2 tablespoons of sesame seeds
  • 1 tablespoon of sesame oil
  • 1 tablespoon of olive oil
  • 1 tablespoon of grated ginger
  • 1 tablespoon of grated turmeric
  • 1 teaspoon of chilli powder

Instructions

Mix all the ingredients for the dressing in a jar, close the lid and shake it well

Get the carrot and onion in a bowl and pour in the dressing, mix well

Notes

Add some fresh coriander to the salad for a more herby flavour
