These muffins are high in protein and ideal as a breakfast or healthy snack. In this recipe no sugar is added so if you like a more sweet muffin, add some sugar or sweetener. The basic recipe is with flour but you can also make this with spelt flour or multigrain flour.
These muffins are ideal to make a day ahead so that you have the perfect healthy snack the next morning.
Healthy snack muffins

- 125 gr of Skyr yoghurt
- 1 teaspoon of baking powder
- 1 eg (medium)
- 1 tablespoon of honey
- 75 gr of flour
- 50 gr of blueberries
Instructions
First mix the baking powder and the flour together.
Then add the egg, honey and Skyr yoghurt. If the mixture is too dry, you can add a tablespoon of milk.
Finally mix the blueberries carefully and poor the batter in muffin molds.
Bake the muffins in a preheated oven at 180 C/360 F for about 25 minutes
